  • Pinch of salt
  • 6 large eggs

  • 4 cups heavy cream

  • Brew the Coffee Base
    Dissolve 1 tablespoon of espresso-style granulated coffee in 2 cups of freshly boiled water. Stir until fully dissolved and set aside to cool slightly.

  • Sift and Mix Dry Ingredients
    In a large mixing bowl, sift together 315 g of plain flour, 50 g of cocoa powder, 200 g of sugar, and a pinch of salt. Whisk to combine evenly.
  • Combine Wet Ingredients
    Create a well in the center of the dry mix. Add 6 eggs and 1½ cups of milk. Gradually pour in the brewed coffee, whisking until the batter is smooth. Finally, stir in 115 g of melted unsalted butter.

  • Cook the Crêpes
    Warm a 10-inch non-stick pan over medium-low heat and lightly grease it with butter. Pour about ¼ cup of batter into the center, then swirl or use a spreader to distribute evenly. Cook for 1 minute, then flip and cook the other side for 30 seconds.
